"WISHBONES" (Pulley Bones), with covering muscle and skin tissue, are severed from the breast approximately half-way between the end of the wishbone (hypocledium) and front point of the breastbone (cranial process of the sternal crest) to a point where the wishbone joins the shoulder. Neck skin is not included.
