URMIS and COMMON NAMES: Fresh Ham.
COMMON USES: Roast; boneless pork roast.
Boneless and shall consist of two outside muscles (biceps femoris and semitendinous) from two hams.  The inner shank (gastrocenemius muscle) may remain.  The popliteral lymph gland and surrounding excess fat in excess of 1/4 inch in depth shall be removed.  The mouse (flexor digitorum superficialis muscle) shall be removed from the inner shank.  The boneless portions shall be reversed, the boned surfaces placed together to produce a uniformly thick roast..  The boneless roast shall be netted or tied.  When smaller roasts are specified, the item shall be divided by a straight cut at a right angle to the length of the cut into approximate equal portions.
