The Boston butt is separated from the shoulder as described in Shoulder Picnic No.405. The skin and underlying fat in excess of 1/4 in. thickness shall be removed. The false lean shall be exposed, and the fat shall be beveled so that it approximately meets the lean on all sides. | ||
