Collagen Proteins

A protein found in the greatest quantity in animals, composing up to 20 to 25 percent of an animal's total protein.  The primary function of collagen is to provide strength and support.  Collagen plays a part in the tenderness the meat.  It is readily broken down in cooking with moist heat.. When cooked and broken down in the production of stock collagen adds texture and gelatin.
