Step Seven:
After the proper cooking of the curds, the liquid whey is drained off.
There are still certain
proteins and milk fats in the whey and after it is dried, whey powder is
used as an ingredient in a
number of foods.
Whey can also be heated and directly acidified with vinegar or citric acid
to produce Ricotta. The
protein most common in whey is Albumin.
