Some cheeses are made with whole milk, and some are made from partially
skimmed milk.
Cheeses that are made with whole milk have a creamier more buttery
texture. Cheeses that are
made from partly skimmed milk have a firmer more plastic texture.
For reference, cheeses made from whole milk, like cheddar, are close to
50% milkfat. These
would be called single creams.
Cheeses like Brie are often produced with mild that has additional cream
added and contain 60%
milkfat.
These are double creams.
Single cream cheeses=50% or more milkfat
Double cream cheeses=60% or more milkfat
Triple cream cheese=70% or more milkfat
Being a triple cream, Mascarpone has a very rich, creamy buttery flavor,
and a luxurious texture.
